
Leftover Quinoa Summer Salad

Ingredients
- Leftover quinoa - 2 cups approx.
- 1 cucumber
- 1 handful of sun-dried tomatoes
- handful of chopped cilantro
- 2 teaspoons cumin
- salt & pepper
- 2 tbsp olive oil
- any other leftover vegetable you hand on hand
Instructions
- Chop cucumber and other other vegetables you are using. Toss quinoa, cucumber, sun dried tomatoes, cilantro and olive. Salt & pepper to taste, add cumin. Toss well, chill and serve!
Notes
- I'm always looking for a good recipe for my leftover quinoa. This is a delicious recipe for a wonderful summer salad. You can add your favorite veggies or keep it simple.
