  1. Leftover quinoa - 2 cups approx.
  2. 1 cucumber
  3. 1 handful of sun-dried tomatoes
  4. handful of chopped cilantro
  5. 2 teaspoons cumin
  6. salt & pepper
  7. 2 tbsp olive oil
  8. any other leftover vegetable you hand on hand
  1. Chop cucumber and other other vegetables you are using. Toss quinoa, cucumber, sun dried tomatoes, cilantro and olive. Salt & pepper to taste, add cumin. Toss well, chill and serve!
  1. I'm always looking for a good recipe for my leftover quinoa. This is a delicious recipe for a wonderful summer salad. You can add your favorite veggies or keep it simple.
