
Kale & Pine Nut Salad with Lemon Tahini Dressing

Ingredients
- 4 cups of shredded kale
- 1/4 cup chopped mushrooms
- 1 granny smith apple sliced thin
- 3 tablespoons of pine nuts
- 1 tablespoons olive oil
- 2 tablespoons tahini
- 2 carrots chopped
- salt & pepper
- 3 tablespoons lemon juice
Instructions
- Use olive oil to lightly toast the pine nuts over medium heat.
- Toss all ingredients then add tahini, lemon juice and olive oil/toasted pine nut mixture.
- Toss well with hands and serve!
Notes
- This is another recipe I modified recently. So fresh and delicious as main course or side.
