Ingredients
  1. 1 Egg White
  2. 1/8Tsp cinnamon
  3. 3/4 cup almond flour/meal
  4. 1/8 Tsp celtic sea salt
  5. 4 Tsp Xylitol or Stevia equivalent (I prefer Xylitol)
  6. Topping
  7. 1/8 Tsp cinnamon
  8. 1/4 Tsp Xylitol
Instructions
  1. mix dry ingredients
  2. add egg white and mix till smooth
  3. Mold into a ball then place ball on sheet of parchment paper (spray paper on both sides with coconut or olive oil spray) in the size of cookie sheet. Place another piece of parchment paper on top and roll. Roll into large square best as you can making sure that it is even as it possible can be so that the crackers will cook evenly. Roll to about 1/8 inch thick or a little less.
  4. Place on cookie sheet leaving the parchment paper on both sides. Bake at 375 for about 8 minutes. Remove the top parchment paper at this time and sprinkle topping evenly over dough. Then use pizza cutter to cut 1" squares, this recipe yeild about 48 crackers. Bake again for another 12 minutes or until slightly browned. Remove from oven and cool, break into squares and enjoy!
