Kale & Pine Nut Salad with Lemon Tahini Dressing

Ingredients
  1. 4 cups of shredded kale
  2. 1/4 cup chopped mushrooms
  3. 1 granny smith apple sliced thin
  4. 3 tablespoons of pine nuts
  5. 1 tablespoons olive oil
  6. 2 tablespoons tahini
  7. 2 carrots chopped
  8. salt & pepper
  9. 3 tablespoons lemon juice
Instructions
  1. Use olive oil to lightly toast the pine nuts over medium heat.
  2. Toss all ingredients then add tahini, lemon juice and olive oil/toasted pine nut mixture.
  3. Toss well with hands and serve!
Notes
  1. This is another recipe I modified recently. So fresh and delicious as main course or side.
