Ingredients
  1. 1 can black beans
  2. 1 can red beans
  3. 1 small onion - chopped
  4. 2 cloves of garlic
  5. 1 cup chopped mushrooms
  6. 2 cups of baby spinach
  7. shredded cheddar cheese
  8. rice wraps
  9. sliced avocado
  10. 2 tbsp olive oil or canola oil
  11. 1tbsp cumin
Instructions
  1. Sautée oil garlic and onions for 5 minutes. Add cumin, black and kidney beans and continue to cook for 15 minutes.
  2. Run water over rice wrap and put in oven at 350 for 2 minutes. Remove wrap and add spinach,
Notes
  1. This is great vegetarian recipe and keeps well throughout the week. Perfect for lunch or dinner. This recipe is forgiving, you can add pretty much add any veggies you like.
